Horneando con una piedra para horno / baking with an Emile Henry Baking stone.

Una vez más abandoné mi blog por más de un año. En mi defensa, mi tesis apenas ha dejado tiempo suficiente para seguir con mis hobbies, y lo que menos me apetece después de horas de redactar resultados y hacer gráficas, es sentarme a escribir (aunque sea en mi blog).

I just forgot to post for more than a year. In my defense, i´ve been working on my thesis and it barely gives me enough free time to keep up with my hobbies, and after a whole day writing my results and making graphs, the last thing i´d like to do is keep up writing (even if its for my blog).

En mi última entrada mencionaba que por fin tenía en mis manos una piedra para horno, una Emile Henry de cerámica y antiadherente. Después de usarla un par de veces, debo aceptar que vale cada centavo invertido en ella, mi principal miedo era que explotara en el horno al primer uso, en internet hay una gran cantidad de quejas a diferentes marcas de piedras para horno que al primer o segundo uso terminan quebrandose por choque térmico, por eso elegí esta marca, los reviews eran muy buenos y aunque no es barata (tal vez por eso ha aguantado) creo que lo vale.

In my last post i showed my new Emile Henry baking stone made of ceramic and glazed with a porous anti adherent (which means it won´t stick and you can use soap to wash it).  After using it a couple times i gotta say its worth every penny, the main reason i bought that specific brand was because i´ve read so many reviews on different brands and models, and so many people were complaining that their stones cracked on the first or second bake, this one is not very cheap but has excellent reviews.  

La primera vez que la utilicé fue en una cena con mis amigos, un par de días antes preparé la masa siguiendo esta adaptación de la receta de Peter Reinhart que utiliza leudado lento en frío, preparé también una versión utilizando mi masa madre de levadura casera (sourdough starter). Compramos varios ingredientes y cada quién extendió una pizza y la preparó con los ingredientes que le parecieron más apropiados, yo preparé una con la masa de sourdough y utilicé chilorio y rodajas de tomate como toppings.

The first time i used the baking stone was making a pizza night with my friends. I prepared the dough a few days before, following this adaptation of Peter Reinhart's pizza Napoletana, it uses cold long fermentation so it went to the fridge for a couple days, and i also made and adaptation of the recipe using my 4 years old sourdough starter.  We bought a lot of ingredients and everyone rolled a pizza pie and used the toppings of his choice, i used my sourdough's and for toppings some chilorio and tomato slices.

La masa quedó justo como esperaba, crujiente y con miga abierta, esta es una pizza hecha por uno de mis amigos, tiene pimiento rojo, salchicha italiana y tocino.

The pizzas were very good, the crust was crisp and had a very open structure. This is one of the pizzas made by my friends, he used italian sausage, red bell pepper and bacon. 


Esta es mi pizza de sourdough, creo que fue mi preferida, la masa tenía un sabor mucho más agradable, aparte, la pizza de chilorio con tomate hace que recuerde mi niñez. Uno de los detalles con esta masa  es que por alguna razón se sentía un poco blanda, no estoy seguro si utilizé demasiada agua o si le faltó hornearse por un poco más, desafortunadamente no tomé nota de cómo la hice y he intentado hacerla nuevamente sin obtener los mismos resultados.

This is my sourdough pizza, this was the one i liked the most, the dough was very tasty and nice, but for some reason it was a little less crisp than the others, i might have used too much hydration or it might have needed a couple more minutes in the oven. Unfortunately i didn´t write down how i made the dough and i've tried a couple times to do it again but it not as good as that one. 

Así se ve el corte en una de las pizzas de sourdough, la masa tiene una gran cantidad de burbujas de aire, solo que en esta utilicé demasiada masa.

En otra ocasión hice pizzas de prosciutto y queso mozarella, pero como siempre, olvidé tomar fotos!
También hice este rollo de pan, relleno de corned beef, queso provolone, aceitunas rellenas, tocino y uvas pasa.

Some other night we made a bread stuffed with corned beef, provolone, bacon, olives and raisins.


y después de años, por fin logré hacer breadbowls de sourdough decentes.

And after years i finally were able to make decent sourdough breadbowls.

 lo suficiente como para usarlos en un clam chowder, no tan bueno como los de san francisco, pero bastante decentes para ser la primera vez.

They were good enough to make some clam chowder, it wasn´t as good as those sold in San Francisco, but they were very tasty.

También hice mi primer intento de coyotas, que no fue tan bueno como esperaba, la receta que seguí no estaba muy bien y la masa parecía de tamales en lugar de galleta, logré corregirla un poco pero no quedó como debería aunque sabían bastante bien.

I also gave it a try to make coyotas, those are desserts original from Sonora, a cookie like dough filled with piloncillo. The recipe i followed wasn´t that great and the dough was like a tamale dough instead of a cookie dough, i kinda fixed it but it wasn´t typical coyota texture, it tasted very good tough.

Horneé algunas cosas más utilizando la piedra para horno, pero olvidé fotografíar la mayoría de ellas.

I've been baking a lot on the baking stone but i always forget to take pictures of the baking goods!.
